Phyllis Logan’s chocolate truffles
Star of Downton Abbey, Phyllis Logan, shares one of her favourite tea time recipes with us.
Makes 16 truffles
150g Dark chocolate
40ml Brandy (or fruit squash)
50g Unsalted butter
60g Icing sugar, sieved
50g Ground almonds
8 glace cherries, halved, or tiny candied balls or chocolate strands
16 Small sweet paper cases
Step 1. Break up two thirds of the chocolate into a heat proof bowl and place over a pan of hot water.
Step 2. Add the brandy (or fruit squash) to the chocolate and leave to melt. Take off the heat and stir in the butter, which should be a little soft.
Step 3. Mix in the sieved icing sugar and the almonds so that it is well blended.
Step 4. Leave in a cool place until the mixture is firm enough to handle.
Step 5. Divide into 16 even-sized pieces and roll into balls.
Step 6. Grate the remaining third of chocolate, place on a piece of greaseproof paper and roll the truffles in it. Alternatively roll in cocoa powder.
Step 7. Place each one into a paper case and press half a cherry on top or any small decoration of your choice.
